We are a small Family Owned Business opened in October of 2025. Our goal is to bring homestyle bakery treats made from scratch with local and seasonal fruits, as well as delicious breakfast and lunch menu items.

Gabe is the head chef, baker and artist. Gabe graduated from the California Culinary Academy in 2004, and went on to work in numerous bakeries and restaurants before taking over a Wedding Cake Shop in 2014.

Our Family moved to Grass Valley in 2016 to escape the chaos of the Bay area. We found an amazing community, and have enjoyed meeting and making new friends as our son went through Cottage Hill, Magnolia and eventually Bear River High School. You may find him hanging around or helping out when he’s not out on the field. Gabe has always enjoyed utilizing his love for food by giving back to our community. You may have seen him cooking at the 4H food booth, or baseball and football little league fields. 

Eager to get back into it, we started a Charcuterie Cart in the Spring of 2025, and Say When was born. Soon after, the opportunity for a Bakery found us and we said NO WAY!  But somehow it all worked out and we opened Say When Bakery and Café in October of 2025. Despite the early mornings and late nights, we absolutely love serving this community through warm croissants, fresh baked scones and delicious cookies, and what is a Saturday Morning without a hot cup of coffee and Breakfast Burrito?
